2 Ingredient Chia Pudding

We love chia pudding in our house. But I ALWAYS forget the ratio of chia seeds to plant-based milk so my friend came up with a great idea. Write it down on a piece of paper and tape in on the side of the jar I keep my chia seeds in. So smart. FYI it is 2 T seeds to every 1/2 plant-based milk of choice.


So here are things I love about chia pudding.

1. It is way cheaper than plant-based yogurt.

2. I know all the things that go into it, it isn't super processed.

3. Chia seeds are so good for you and you get a LOT of them.

4. It is so versatile. You can eat it plain, add granola and fruit, make a parfait, mix it with a thick smoothie, so many options,

5. It is filling. I always take more than I think I need and I get so full.

6. It is easy to make. You do need to think ahead of time so it has time to set up, but it is only 3 minutes of work.


Ingredients

1 c plant-based milk, I prefer plain soy

1/4 c chia seeds

1 T maple syrup, optional (I don't use it, people just add it later)


Directions

1. Combine milk and chia see


ds in a large bowl and whisk well for at least 1-2 minutes. Let sit for five minutes and whisk again to re-distribute the seeds.

2. Put in the fridge a


nd let sit at least 30 minutes to an hour until the seeds plump up and it becomes thick

3. ENJOY with granola, fruit, plain, etc.
