Cinnamon Raisin Banana Bread



I love banana bread. But my two and a half year old loves bananas, so we never have bananas long enough to make banana bread. It makes me kind of sad. However, I got a LOT of bananas this week. Like 3 big bunches for two adults and two children so I made banana bread and it is so good. I put a little twist in it by adding extra cinnamon and raisins to make it like cinnamon bread too. My kids were obsessed (as was I). I don't think my husband even got any because my two year old ate almost half the loaf in one sitting. He just kept coming back for more. Either that or he was feeding it to the dog, but I find that one unlikely.


It is a simple recipe. Just dump everything in and stir it together. The only thing that has to be done "in advance" is letting the flax-egg set up. I just do this step first and it is ready by the time everything is in the bowl.

Ingredients

1 T Flaxseed Mill

3 T Water

3 Bananas, mashed

1/4 c Applesauce

1/4 c Peanut Butter (or other nut butter)

1/4 c Pure Maple Syrup

2 tsp Baking Powder

1/4 tsp Salt, optional

1 c All Purpose Flour

1 tsp Cinnamon

1/3 c Raisins



Directions

1. Preheat oven to 350 degrees F.

2. Combine flaxseed mill and water in a small bowl. Stir to combine and set aside.

3. In a large bowl, mash bananas. Add applesauce, peanut butter, syrup, and flax-egg and stir to combine.

4. Stir in dry ingredients, except raisins, until combined.

5. Fold in raisins.

6. Pour into a greased or parchment lined bread pan and bake for 55-60 minutes until a toothpick comes out clean. Let cool in the pan 5-10 minutes.
