Best Smoothie Ever

I have been at a virtual conference for Utah Recreation Therapy Association for the past two days. 8:00 - 5:00 both days. That is a lot of computer time. Yikes! Unfortunately I can't just be chilling at home and hiking and watching it. I am on the executive committee for the Utah Recreation Therapy Association (URTA) so I am with the rest of my peeps on the committee, socially distanced in a gym, and get to room host and help the conference run smoothly. It went really well. We had never done a virtual conference before but hey, crazy times call for next level commitment to make things happen, and we have made it happen.


Luckily for me, the meals have been much more on par for me. The snacks are just trail mix, hummus, carrots, fruit, granola bars, etc. Meals are sandwiches and fruit and salads and it has been great. Normally I bring all my own food to make sure I can make it through the day without diving into hanger. Because a hangry Katie is a no good Katie.


So before I knew the conference would be so great on the food scale, I whipped up this baby as a snack for me and for part of my husband's lunch. This amount can be enough to be part of 2 adult lunches. And I still drank it because it is so so tasty.





Ingredients

1/4 c Plant-Based Milk

1/4 c Water

2 c Frozen Berries

1 Banana

2 Large Stalks Celery

6+ c Spinach

1/2 Scoop Vanilla Protein Powder

1 tsp Chia Seeds


Directions

1. Place all ingredients in a high-powered blender and blend until smooth.

2. Enjoy
