Glamping

We spent the last week in Yosemite National Park and it was awesome. And, since we were going to be car camping for a week, we glamped. Well, what we consider glamping. We brought our full sized air mattress, pillows, blankets, and really REALLY good food. It was an epic trip.

So we left Friday after work and drove as far as we could across Nevada, aka Winnemucka. We stayed in a KOA and got out of there super fast (yogurt, granola, oatmeal).
We stopped in South Lake Tahoe and played at Sand Hallow, hiked to Eagle Lake and saw Upper and Lower Eagle Falls, saw Emerald Bay, and camped at Fallen Leaf Campground and ate this...

(sorry it is blurry) but it is Stir Fry Veggies and Tofu with Peanut Sauce over Raman Noodles. (I cooked the tofu and made the peanut sauce before the trip.)
Sunday morning we had vegan french toast (forgot to take a picture) and hiked up to Fallen Leaf Lake.

Then we headed to Yosemite, rented bikes, and rode around the valley. Then we ate this...

Butternut Squash and Lentil Chili with guacamole and Vegan Cornbread. (Yes, I made the chili and corn bread before the trip so we just had to warm everything up.)
Monday we ate this for breakfast. Mashed Sweet Potatoes with dried apples, raisins, chia seeds, granola, and ground almonds. It is so good, we ate it twice.

Then, we hiked the Four Mile Trail to Glacier Point and from there we connected to the Panorama Trail/John Muir Trail and ended at Happy Isles. Luckily for us, Happy Isles is right next to campground. It was about a 12-13 mile day, and Grant hiked about 3/4 a mile of it. Good job little buddy. And we played at Nevada Falls for a long time. Then we ate this...

Hawaiian Haystacks. I used extra peanut sauce and tofu for mine. Along with pineapple, Mandarin oranges, bell peppers, tomatoes, olives, and crunchy noodles over rice. It was so delicious.
Tuesday, we hiked Half Dome. Yes. We took a toddler up Half Dome. Well, we took him to the top of Sub Dome (the base of the cables), then we traded off going up the cables. Since we were on the trail at 6:15 am, we just did pb and banana sandwiches, boiled eggs (not me) on the trail.

After a long 16.5 mile day (good job in the pack little man) we bathed in the river...and ate this

Fajitas with homemade salsa. So good.
Wednesday was chill. We had breakfast burritos. (I made tofu scramble before we left for the trip)


They were delicious.
Then we drove to Glacier Point (there was an active fire along the road. So smokey. Saw the fire fighters and everything.)

And back to Glacier Point for a late lunch.

Then we hiked to Inspiration Point. And it was inspiring.

Then we went to the beach, and ate curry. So good.

Then it rained...So much rain. Our tent was in a puddle more than 3 inches deep. So we left Thursday really early. We had more sweet potato breakfast and hiked around some giant sequoias and drove back to South Tahoe because it was snowing...and then we indulged in a motel with a hot shower, eating pho, and I even got to go to a sweet little vegan cafe for breakfast. So delicious.
