Thanksgiving 2018

Here is what I will be eating for Thanksgiving this year. I will include links to all of the recipes.
A combo of these three salads.

*I haven't written this recipe up yet, but basically it is olive oil, balsamic vinegar, Dijon mustard, maple syrup, garlic, and sage as a marinade. The veggies are sweet potatoes, red potatoes, carrots, onion, garlic, and parsnips. I topped with craisins, pumpkins seeds, and sunflower seeds.


Basically, tomorrow I will roast some butternut squash, sweet potatoes, and chickpeas in sage and garlic and top it with pomegranate seeds. I will serve it over green leaf lettuce with a side of polenta because corn is a "Thanksgiving food".

I will have cranberry sauce on the side, or just eat an entire bowl of it and cranberry bread. And....my first ever pumpkin pie. I have always been intimidated to make a pumpkin pie and I don't think I've eaten one in 10 years because of that fact. But I did it, it just came out of the oven and it wasn't too hard. We'll see how it tastes tomorrow.

The pumpkin pie recipe is from Vegan Richa. I just pulled it out of the oven, so I don't have any great pictures yet, but I will upload them when they are ready. I just wanted to get this posted so you have time to go to the store and plan your feast for tomorrow. (You don't have to eat turkey to enjoy the day)
