Quick Dinner Rolls



It is Sunday and winter decided to come this weekend. Winter = SOUP SEASON! Soup needs rolls.

Luckily for me, this recipe is quick.

Quick Rolls.

One hour start to stomach.

No. Joke.



Such a beautiful thing. So I started this dough while baby was sleeping...then he woke up, while I was kneading the dough. Hubby and toddler were still sleeping. What to do? You can't interrupt dough making or it gets messed up. But baby boy has had croup and I am trying to not let him scream because he screamed for 2 days. No joke. What to do? I nursed that baby and kneaded the dough at the same time. I felt like such a boss.

Anyway, that goes to show that this recipe is really easy.


(You can use just plain flour if you don't have oat flour. It is easy to make if you don't have any. Just put it in a high power blender and blend into flour.)


Ingredients

1.5 All Purpose Flour

1 c Oat Flour

2 T Honey

2 1/4 tsp Active Dry Yeast (1 packet)

1/2 tsp Salt

3/4 c Warm Water

2 T Apple Sauce

Directions

1. In a large bowl, combine 1 c flour, 1 c oat flour, yeast and salt.

2. Add warm water, honey, and applesauce. Beat on medium speed for 3 minutes until smooth.

3. Add last 1/2 c flour and mix until a soft ball of dough forms.

4. Turn dough onto well floured surface and knead 4-6 minutes until dough is smooth and elastic.

5. Shape into a ball, place back in bowl, cover and lest rest for 10 minutes.

6. Divide into 15 pieces and shape into balls and place in greased cupcake pan and let rise 30 minutes.

7. Bake at 375 degrees for 12 minutes.

8. Brush with honey before serving.
