"BLT" Sandwiches

Okay, these actually have nothing to do with bacon. No fakin'. No pretend meats. It is a tempeh, lettuce, avocado, and tomato sandwich and it is SO FREAKIN' GOOD. Why? Because anything with avocado is delicious and because the marinade I use for the tempeh is like crack. It is so good. And it is so easy. This entire meal takes about 20 minutes if you think far enough ahead to marinate the tempeh earlier in the day.
The longer you marinate the tempeh, the better it tastes because the more marinade it soaks up. But honestly, I only marinated mine for about ten minutes because I wasn't on top of my game and it was still really good.
To make the marinade just whisk all the ingredients together, slice the tempeh into long, thing strips and place in a tupperware. Pour the marinade over them and make sure that you mix the tupperware around every so often so that all sides are evenly coated. Remember the longer it soaks, the better it tastes.
You can use any type of greens you want in lieu of the lettuce. I used Romaine but that was before the E Coli scare. So I would definitely recommend using something else now.
These sandwiches pair well with salad or soup or both or just by themselves. I had mine as an open faced sandwich but my husband and son had normal sandwiches. We used toasted bread to give the sandwich more structure since we just used normal whole wheat sandwich bread. But this would also be great on some sourdough buns, rolls, or normal rolls/buns.

Ingredients
1 package plain tempeh, sliced into thin strips
2 T Soy Sauce
1 T Maple Syrup
Greens of choice, I used Romaine Lettuce
2-3 Roma Tomatoes, sliced
1-2 Avocados, sliced
Hummus, optional
Bread, toasted
Directions
1. Slice tempeh into strips and arrange in a shallow dish. Combine soy sauce and maple syrup and pour over tempeh.
2. Let marinate at least 20 minutes. Flip halfway through to let all sides marinate.
3. Bake at 350 F for 15-20 minutes, flip after 10 minutes.
**I used my air fryer. I set it at 370 F and did 8-10 minutes. I flipped them halfway through.**
4. Meanwhile, slice tomatoes, avocado, and wash/prep greens.
5. Once tempeh is done, toast bread and assemble sandwiches.
**I put hummus on one side, avocado on the other, followed by tomatoes tempeh, greens, and then the hummus side of the bread.**
