Christmas Green Smoothie

So yesterday was election day. Did you vote? I sure hope so, this one is a big deal.

I promise not to get political here. That is not the purpose of this space. The purpose of this space is to talk about food and adventure. And I tell you what I had to do everything in my power to reign in the stress eating last night. Man oh man. And this morning...it hasn't changed. The results, not the stress eating, I am trying to just stay calm. My mantra today is, "It is what it is. Accept it. You cannot change it. Make the best of whatever happens." That is my goal today, to make the best of whatever happens. Perhaps that will include moving the Canada. I may have already started researching jobs there for my husband...But for now I will move my body and nourish my body because that is how I take care of myself and put myself in a good head space to be able to accept and move forward with whatever happens.

And as if the election yesterday wasn't enough. The school board for my school district voted about going back to in person learning yesterday. I don't know the results of that one either. Salt Lake City School District is the ONLY district in the state that is fully virtual and my kid is doing really well with it. He is learning so much. Sure it would be convenient for him to be in school, but I also want him, his teachers, and in return, myself and and family to be safe. But I won't get on my Corona Tirade here either, because I will never stop. Let's talk about food.

The first time I made this smoothie bowl I said, "Hey, I made Christmas in a bowl." Not that it tastes like Christmas, it just looks like Christmas. And it was so good. I have since made it three times. Twice as a smoothie bowl and once as a smoothie with various tweaks because my kids are crazy about it. Every time I make it, they ask for more and I end up giving them part of mine. It makes sense, it is made out of my oldest son's two favorite fruits: pears and strawberries.
I have made several tweaks to the final result. I will write all of the combos and let you pick and choose what you want.

Ingredients
1 Pear
2 c Frozen Strawberries
1/2 c Frozen Bananas, optional
**I used bananas when I opted for water instead of juice**
1/2 c Fresh Orange Juice or Water
1 T Chia Seeds
4-5 c Packed Spinach
1/2 c Vanilla Protein Powder, optional
Toppings
Peanut Butter
Granola
Berries
Pomegranate Seeds
Bananas

Directions
1. Place all ingredients in a high power blender and blend until smooth. You may have to scrape down the sides and blend it twice. There was a lot of frozen stuff to break up in mine.
2. Top with toppings or add more liquid and drink as just a smoothie.
