Citrus Salad

Summer is coming. It is finally getting warm. I say this so it will probably snow tomorrow because that is how Utah is in the spring. But it is almost May so fingers crossed that we are done with snow and rain because I am so ready for sun and hot weather. (If you ask me in a month how I feel about the hot weather I will be begging for 60 degrees again, you can never win...)
Anyway. Summer is coming and that means less soup more salad because so much tasty produce is in season. But, this is a winter salad. Winter = citrus in my mind and this is a salad we ate a lot this winter because we got grapefruit ALMOST every week from our weekly produce co-op. And I have gotten really creative with grapefruit, I am also grateful that my three year old has a refined palate and likes grapefruit (without sugar on it). It is also really good on peanut butter toast with a little honey drizzled over it. Sweet, salty, and sour all at once. It is so satisfying to your tongue.
Anyway, this salad is super quick to throw together and pairs well with soup or any other entree. Or, you could eat a whole bunch of it with some whole grain bread and hummus or something and that could be a lovely, light meal.


Ingredients
4-5 c Spinach, loosely packed
1/2 c Pistachios, shelled
1/2 c Walnuts
1/4 c Craisins
1 Grapefruit, peeled and diced
Sweet Tahini Dressing
1/4 c Tahini
2 T Maple Syrup
2 T + Hot Water
1 tsp lemon juice
Directions
1. Peel and dice grapefruit, set aside.
2. Shell pistachios, set aside.
3. Wash and dry spinach and place in large salad bowl and add all ingredients.
4. Make dressing by combining Tahini, syrup, water, and lemon juice and whisk until pourable.
