Gingerbread Bites

We eat a lot of power balls in our home. Like an insane amount. Like if the batch lasts longer than two days, it is a miracle.
So, since we eat so many power balls, we have a lot of different recipes. Pumpkin ones for fall, fruity ones for summer, the regular peanut butter varieties, and of course, gingerbread for Christmas.
I will admit, these ones can be really sticky when rolling them out. My second time making them, I added less liquid ingredients but then they were too dry. So it is a fine balance. I tried adding most but not all of the liquids and then adding them very slowly. That is what worked best for me.
Another tip, chill them for at least 30 minutes in the refrigerator before you roll them out. That way they set a little bit and will roll together in a less messy way.

The things I love about these power balls (or circle bars as my son calls them. Because they are like a bar but they are circles...Makes sense to me.) Anyway, the things I like about these are they taste like gingerbread cookies, they remind me of Christmas, they smell amazing, and they are filling. I make the mistake of snacking on them as I roll them and then I am so full because I eat like four of them at once.
You can use any type of nut butter for them. I don't suggest peanut butter just because it has such a strong and recognizable taste, it overpowers the other flavors. So almond or cashew butter work best. I haven't tried sun butter, but if you try it, let me know how it works.


Recipe
2 c oats 2 T chia seeds 1/4 c flax 1/4-1/3 c almond butter 1/4 c agave 2 T molasses 1/2 t cinnamon Aquafaba or water if it is too dry.
Directions -Combine oats, chia, flax, and cinnamon in a food processor and paste until floury.
-Add almond butter, agave, and molasses and pulse until combined.
-If too dry, add some aquafaba or water a tsp at a time. -Roll into balls and store in the fridge.
