Heavenly Banana Bread

This banana bread is seriously a slice of heaven. It is so good.
Normally, I do not cook or bake with conventional sugars. I just try to avoid them. However, one of my dear friends had just had a baby and I was bringing her dinner, so I made her a few nursing treats (because we all know those first few months of nursing you just need to eat anything and everything to keep your supply up.) So, I decided that since this was a special treat for her, I was doing the real deal. Brown sugar. Oh yeah.
I never actually tasted the bread, but I tasted the batter and it was amazing. It was actually quite nerve racking to give her a loaf of bread that was a complete experiment and I hadn't tasted...I was really nervous. Then shortly after dropping it off, I got a text saying, "Oh my gosh that bread tastes like heaven. It is so good." She then went on to say she cut a huge piece out of the center first and left the two ends because she likes the center best because it stays a little soft. Huge sigh of relief. The bread was a approved by her, her husband, and their two-year-old son.

Anyway, it is really similar to my regular banana bread recipe but I just changed a few things to make it extra special for my friend. To have it be a special treat for her. Because having a new baby is not easy, and every new mama deserves delicious treats.

Ingredients 1/3 c Coconut Oil, melted
2 T Applesauce
3 Bananas, mashed
1 tsp Baking Soda
2 T Flaxseed Mill with 6 T Water
1/2 tsp Baking Powder
2 c All Purpose Flour
1 tsp Vanilla Extract
1/2 tsp Cinnamon
1/4 tsp Nutmeg
3/4 c Brown Sugar
1/2 c Chocolate Chips
1 Banana, sliced

Directions
1. Preheat oven to 350 degrees F.
2. In a small bowl, combine 2 T flaxseed with 6 T water and stir to combine. Set aside to thicken up.
3. Mash bananas with tines of a fork in a large bowl. Add melted coconut oil, applesauce, and "flax-egg". Stir to combine.
4. Add dry ingredients and stir until well combined.
5. Fold in chocolate chips.
6. Pour into greased bread pan and place sliced bananas on top. Bake for 60 minutes until a toothpick comes out clean when tested.
7. Let cool for 5 minutes in the pan, then turn out onto a cooling rack and cool completely before eating.
8. ENJOY.
