Breakfast is one of my favorite things. People think that is funny because most traditional breakfast foods are not my style. I don't eat eggs, yogurt, most cereal, normal pancakes/waffles, etc. Everything has to be homemade by me, or someone who knows me, but what I can eat, I love. Most of my breakfasts are pretty quick, but on the weekends, I usually get a little fancier if I have the time.
When I have the time, this is a meal I love. These are great for turning into breakfast burritos, eating with toast, eating plain, or kind of like tacos. I've tried all these ways and they are all tasty. So get creative and see what you like best.

Ingredients
Half Sweet Potato, cubed
Half Package Firm Tofu, crumbled
Half Yellow Onion, diced
1/2 tsp Coriander
1/2 tsp Cumin
1/2 tsp Turmeric
1 tsp Nutritional Yeast
Pinch of Cayenne Pepper, optional
Dash of Black Pepper, optional
Corn or Flour Tortillas or Toast
1 can Black Beans, drained
Vegan Cheese, optional
Avocado
Hot Sauce/Salsa, optional

Directions
1. Wash and chop sweet potato and add to air fryer or preheat oven to 400 degrees F. Cook until soft.
*Air Fryer 12-15 minutes at 370 degrees. Stir occasionally.
*Oven 20-30 minutes. Stir occasionally.
2. Meanwhile, dice onion and saute onions until soft and translucent. Add tofu and spices to skillet and scramble.
3. Decide if you are doing a burrito, toast, tacos, or plain and prep your tortillas accordingly.
4. Cover tortilla with tofu, cooked sweet potato hash browns, black beans, and avocado. 5. 5. Add hot sauce or salsa as desired.
