I'm Dreaming of Smoothie Bowls

My threenager, yes that is a thing, decided he would rather spend the night at grandma's house than go to joy school tomorrow. Normally, I would not let this happen. But he has a very special relationship with Juju and she's been out of town for two weeks and he was so excited to see her today. (So excited that he fell asleep on the way to the airport when we went to pick her and Papa up...)



Anyway, he is gone. Baby is asleep. Husband is at choir. So, I am getting stuff done. I got breakfast prepped for the week: made my "delicious" saw dust bread (only 15 more days hopefully), and roasted and smashed a giant sweet potato and some carrots, and made more chickpea frittatas. So now I don't have to fret when I wake up and want to eat because it is DONE. Yay for being productive.


As I wrote in my previous post, I am dreaming of when I get to eat this again. Dreaming and drooling. So try this out and let me know how you like it. Because I loved it, once upon a time, and wish so badly to have it right this minute but I can't. One slip up and ruin all the progress I've made with killing the yeast. So pray for me. I am almost to the summit (tomorrow is day 15, halfway) and then it is countdown time to when I can eat beauties like this again.



Ingredients

Filling

Spinach

Carrot

1 Frozen Banana

1 Kiwi

1 T Flax Seed Mill

Water, just a splash


Toppings

Blueberries

Granola

Walnuts


Directions

1. Combine filling ingredients in high power blender and blend until smooth and thick. I barely use any water, just enough to get things blending.

2. Top with toppings and ENJOY.
