Lemon Blueberry Power Balls

These were the last things I made with my food processor before it bit the dust. I am so sad. But hey, we've had it just over 10 years and it has worked very hard. It is used a couple times a week. Sometimes a couple times a day. I am actually surprised it has lasted as long as it did. If Kitchenaid wants to give me a new one, I would love that. Until then....I have my little handheld one...(insert sad face.)


I made these ones because for my birthday, my sister gave me a bunch of different dried fruits that she knew I would never buy myself. She is so kind and thoughtful. I am really excited about these because they are so good. They are a fresh taste but just as filling and filled with fat and protein as any other power ball I've made. And like all other power balls I make, they are quick and easy to make. Hooray!


I don't have much else to say, other than that I made a big fort for my son and he is watching Disney's Robin Hood. The other is about to unplug the computer any minute. (He is a Tasmanian Devil...) So I am going to wrap this up before I loose it.



Ingredients

1 c Walnuts

1 c Almonds

1.5 c Oats

1 T Lemon Juice

1/2 c Maple Syrup or Agave

1/2 c Dried Blueberries


Directions

1. Combine nuts and oats in food processor and pulse until a meal.

2. Add lemon juice and sweetener until combined. Fold in blueberries.

*If it is too wet, add more oats. If it is too dry, add more sweetener or lemon juice.*

3. Let sit in the fridge 15-30 minutes. Roll into balls. Store in a sealed container in the refrigerator.
