Mint Green Smoothie


Do you ever find yourself having an excess of fresh herbs? Not usually in the winter. I recently got mint from my food co-op and after two recipes of using it, I still had a little bit left. I thought of how refreshing mint limeade or mint lemonade is in the summer and decided to give it a go in a smoothie.


It did not disappoint.


This is the most refreshing smoothie. Even on a cold winter day.

It was really nice to have a different spin on a smoothie. My bases usually consist of spinach or kale. This one has neither. It was a light, refreshing change and I can't wait to make it on a hot summer day when I have mint growing out my ears in my garden.



Ingredients

Fresh Mint

1/2 Cucumber, peeled

1 Ripe Banana

1/2 c Almond Milk or Water

*1/2 Scoop Vegan Vanilla Protein Powder, optional

4 Ice Cubes


Directions

1. Combine all ingredients in a high power blender and blend until smooth.

2. ENJOY
