Pineapple Fried Rice

This summer and fall have been crazy. We have been so busy that I haven't had a moment to sit down and write anything for the website. I apologize. Because of that, I have just been posting all my recipes in my posts on Instagram because that is all I have been able to manage. However, I am having a "slow morning" so I thought I'd get some work done. (Who wants to bet my baby will wake up right after I write that sentence?)



Anyway, I've had a list of recipes on my phone and on sticky notes on my cupboard that I have been needing to post for months. Months. So today, I took down one of those sticky notes. I wonder if my husband will notice? If he does, he will be stoked. He has never mentioned the fact that there are recipe sticky notes that have been on the cupboard FOR MONTHS, because he is a good person/husband, but I know that he will love to have them not there anymore. So, it is my goal to get a few posts up so I can be a good person and take all those sticky notes down.



Anyway, I can't claim this to be a "fall dish" by any means. It doesn't fit into any "season". It is just fried rice. We all need fried rice every once in awhile. But this fried rice doesn't have egg or ham in it, that is what I grew up on. Ham fried rice. I didn't know there were other types of fried rice. Even as a kid I picked out the ham bits because I didn't like how they tasted.


Anyway, back to my fried rice. First of all, it isn't actually "fried" and it has pineapple. What could be more delicious than that?



Ingredients

1.5 c rice

1 c pineapple juice

2 c water

1 c frozen peas and carrot mix

1 c pineapple

1 T soy sauce

1 bunch green onion, diced


Directions

1. Combine rice, pineapple juice, and water in medium sauce pan and bring to a boil. Reduce heat to simmer, cover, and cook until rice has absorbed all the moisture and is soft.

*I don't like to use a rice cooker for this one because the pineapple juice burns to the bottom.*

2. Prep pineapple and green onions.

3. When rice is done, pour rice and all ingredients into a wok or large skillet and cook until flavors are combined and absorbed.

4. ENJOY.
