Strawberry Stuffed French Toast

Brunch is not really my thing. I wake up hungry. I work out in the morning. So by 9 a.m. I've usually eaten breakfast twice. So waiting until 10ish to eat sounds terrible to me. But that is just me. However, waking up at 6 a.m. to make this and be eating by 7 a.m. on a Sunday is totally my jam. I know, I'm a sick person. But it is what it is. Just imagine, if you ever stay at my house, I will make you breakfast...and lunch...and dinner because that is what I do.


Anyway, this looks fancy, sounds fancy, tastes fancy but guess what, it isn't. It is so simple and easy to make.

Ingredients

1 Loaf of French Bread

1/2 c Raw Cashews

Strawberries

2 T Maple Syrup, divided

1 c Almond Milk

2 T Flour

1 T Nutritional Yeast

1 tsp Cinnamon

Nutmeg, pinch

Salt, pinch



Directions

1. Soak cashews in 1 c boiling water and let soak 15 minutes.

2. Whisk almond milk, 1 T syrup, flour, nutritional yeast, cinnamon, nutmeg, and salt.

3. Strain cashews and preserve water. Combine cashews, 1 T maple syrup, 1-1.5 c strawberries and puree until smooth and thick.

4. Slice bread into two inch slices and cut a deep slit halfway through each slice, like you are cutting into a roll.

5. Stuff each slice of bread and place bread in shallow dish (with sides) that holds all of the bread. Pour the mixture over the bread, flipping it around to coat thoroughly on all four sides.

6. Heat coconut oil in a large skillet over med-high heat. When pan is hot, place bread slices and cook for a few minutes per side until golden brown
