Vegan Mashed Potatoes

I do not like potatoes.
Baked potatoes.
Mashed potatoes.
Roasted potatoes.
I do not like them Sam I Am.

I was talking to a friend of mine about how I don't like potatoes. She is also plant-based and asked, "What about mashed potatoes?" And I said, "Somethings are just not worth the effort." I got a good scolding. And she told me what she does for mashed potatoes and how everyone she feeds them to, plant-based or not, loves them. Nobody questions them. So, I gave it a try. What's the harm?
My family LOVED them. My husband said they were delicious and was so excited to eat mashed potatoes for the first time in ten years (made by me). My 4 year old, who hates potatoes, liked them, my 20 month old, LOVED them. He ate three servings of them. I even liked them. This is big news. I liked mashed potatoes. So I stand corrected. I sent a Marco Polo to my friend, who lives in Seattle, and told her she was right. They were delicious.

Ingredients
Half Head of Cauliflower
5 Large Red Potatoes
1/4 c Nutritional Yeast
Plant-Based Milk
Salt and Pepper, to taste
Oregano, to taste
Directions
1. Wash and peel potatoes. Chop cauliflower. Combine cauliflower and potatoes and steam until very soft.
2. Mash the potatoes and cauliflower. I added some of the leftover water from steaming and some oat milk. I am sure soy or coconut milk or cream would also be great.
**I did not measure the liquid I used. I just slowly added it until the potatoes and cauliflower were mashing.**
3. Add nutritional yeast, salt, pepper, and oregano to taste.
4. ENJOY
