Zucchini Boats



Sorry about the hiatus. I have been out of town in Glacier and Waterton Lakes National Parks and they were beautiful. If you have not been up there and you love mountains, go. I will give a full post of our trip on the blog once I get caught up. I did not post for the entire week I was gone and for about a week before hand because I was busy getting ready for the trip. But I was still cooking delicious food and the recipes have just been waiting to get out to you. So without further adieu, here is another delicious, quick, and easy recipe to use up that zucchini taking over your garden. (I only planted one plant this year. One plant. And it is STILL taking over my garden.)


Ingredients

1 large zucchini, washed and cut lengthwise

1 c black beans, rinsed

*1/2 tsp cumin

*1/4 - 1/2 tsp chili powder

*1/4 tsp garlic powder

1/2 c frozen corn

1/2 c salsa

1 avocado, peeled and diced

cilantro, to garnish

vegan cheese, optional

*these spice amounts are estimates because I just spiced to taste. So start with less and work your way up to avoid over spicing and ruining the dish.

Directions

1. Preheat oven to high broil

2. Wash and cut zucchini lengthwise and scoop out seed to make a "boat"

3. Combine black beans, corn, cumin, chili powder, garlic powder, and salsa and mix well.

4. Scoop bean mixture into the zucchini boat and place on a baking tray (If you are using cheese, top with cheese now)

5. Broil for 5 minutes and check zucchini with a fork. Remove once fork tender (after 5 minutes I check every minute because my broiler cooks differently every time I use it and all broilers are different.)

6. Garnish with avocado and cilantro

7. ENJOY
