Christmas Pancakes

Have I ever mentioned that I hate pancakes? (3 years of making hundreds of pancakes a day for teenagers on river trips will do that to you.) But I saw this cute idea on Pinterest and had to give it a try. And I am not lying when I said that the result was awesome. Other than the fact that my son wouldn't touch them, but he has never been a pancake fan, I wonder where he gets that from? But my husband was impressed.

"These are great Kat. I really like the texture. They are thick but not stone thick. And they aren't dry. They are...hardy. Good job."
I smiled and said thanks.
"Are these vegan?"
"Yes."
I then got the approving head nod/smile/thumbs up while chewing he gives me when I surprise him with my wicked sneaky vegan ways.

A few things I like about this recipe is unlike pancake mix you buy at the store, all of the ingredients are real. And, they are ingredients easily found in my pantry/fridge at all times.
These pancakes can be used for every day and special occassions. I added some green food coloring and made different sizes to stack like Christmas trees. I then cut stars out of banana slices. Pretty simple.
Ingredients
1 c flour
rolled oats, a big handful
1.5 tsp baking powder
3 T applesauce
1c + 1/8c almond milk
1.5 T chia seeds
4.5 T water
1/2 banana, smashed
*Green food coloring

Directions
1. Combine dry ingredients and whisk. Add in wet ingredients, except for banana, and whisk well.
2. In a separate bowl, mash banana with a fork and add to batter. Mix well.
3. On a lightly greased griddle, pour desired shape/size and wait for bubbles to form and edges to lift. Flip pancakes and cook completely through.
4. Serve with syrup, applesauce, jam, or peanut butter and syrup (my hubby's favorite)
5. ENJOY
