Double Decker Lentil Tacos

Happy Memorial Day.
I hope you enjoyed the day with family and friends making memories and honoring those who have left us. We got to spend some special time with my brother-in-law, who is in the Air Force, honoring a cousin (Marine) today.

Obviously, these are not what I ate today, although I wish I did. I have a BBQ at my parent's house so I will be veggie burger-ing it up because I spent the day laying a patio. Yes, I laid a patio today. For our pizza oven. I get the hard labor now that the hubbster is broken...it's okay, he still finds ways to be useful. Like barking out orders for more perfection. Just kidding. He is actually quite handy as a one handed dude learning to be left handed.
Anyway, I thought this recipe was appropriate because tomorrow is TACO TUESDAY! Just in time.


Ingredients
1 yellow onion, diced
3 cloves garlic, minced
olive oil
1/2 tsp chili powder
1 tsp cumin
salt, to taste
1 c vegetable broth (or water)
1 c lentils
1 c salsa
1.5 c refried beans (1 can or make your own)
corn tortillas
romaine lettuce, shredded
avocado, garnish
tomatoes, garnish
salsa and/or hot sauce, garnish

Directions
1. Dice onions and garlic. Saute in olive oil over medium heat with spices and salt until soft and fragrant.
2. Add lentils and stir to coat. Immediately add broth/water and simmer covered over low heat until water is absorbed and lentils are becoming thick.
3. Fold in salsa and simmer uncovered 10 more minutes until lentils are soft.
*You may need a hair more salsa depending on how hot your stove cooks*
4. While lentils are cooking prep remaining ingredients. Warm tortillas, chop tomatoes, lettuce, and avocado.
*I am into using dehydrated refried beans right now, I know it sounds gross, but my mother-in-law gave us some old food storage and some of it needed to be eaten, and honestly, they arar better than canned, GREAT for camping/backpacking, or when I am in a pinch and haven't thought ahead about making refried beans.
5. Build the double decker tacos: spread refried beans on one tortilla, place another tortilla over it and add lentils, lettuce, tomatoes, avocado, and more salsa.
