Garden Bowl



Fresh vegetables are the best. They are delicious and so satisfying to eat. Or at least we think so in our house. The more veggies, the better. And I am so blessed because even though my husband is not vegan, he will eat anything you give him. And he loves vegetables. He often will say, "I need something with a lot of veggies tonight." Done and done. He doesn't require meat to be fed. He is perfectly happy with whatever I put in front of him and I am so grateful, because there is no way on earth I would make two meals every night.


Anyway, done with my soapbox/bragging about the awesomeness that is my husband. This bowl is the bomb. It is so tasty and fresh with green beans, brussel sprouts, sweet potatoes, red onion, my roasted red pepper hummus, lentils, and Israeli couscous. It is really easy to make and delicious. Basically, I get the veggies chopped and then throw them in the oven at the same time I start the lentils and the couscous, then I make the hummus. That way, everything is done at the same time so it is nice and hot and delicious.

So, let's get to it.


Ingredients

1 c Israeli Couscous

1 c Brown Lentils

1 Sweet potato, cut into 2" strips

10-15 Brussel Sprouts, halved

1/2 Red Onion, sliced

Fresh Green Beans, ends clipped

Olive Oil

Salt and Pepper

Cumin

1 Clove Garlic, minced


Directions

1. Preheat oven to 400 degrees F. Wash and chop vegetables. Place sweet potatoes on a baking dish and sprinkle with cumin. Place brussel sprouts, red onion, and green beans in a bag and add a little bit of olive oil, salt, and pepper. Shake the bag to fully coat and add to the baking sheet.

2. Bake 20 minutes, stir and bake 20 more minutes.

3. Meanwhile, add 1 c lentils and 2 c water to a pan and bring to boil, cover and simmer until soft.

**or you could be lazy like me and put them in the rice cooker. Perfect every time.**

4. Bring 1 1/4 c water to a boil. Once boiling, add 1 c couscous. Reduce heat and simmer, stirring occasionally until couscous is soft and water is absorbed.

5. Make your hummus

6. Once lentils are done, add some cumin to taste, the minced garlic, and some salt and pepper.

7. Once everything is cooked assemble your bowl and enjoy.
