Pumpkin Pancakes

I just can't get enough pumpkin. I wish is was in season all year long.

I try to not get religious on here, but my family and I are members of The Church of Jesus Christ of Latter-day Saints. This year, The Church of Jesus Christ of Latter-day Saints released a new learning program called, Come Follow Me. Come Follow Me puts a BIG emphasis on learning/teaching yourself and your family the gospel at home. So, we have decided to make Sunday mornings our special breakfast and family scripture study. With a 3 year old and a 6 month old, more than our nightly scripture stories before bed is not realistic more than once a week. Some families are different, but this is what works for us.

So, every Sunday, I try to make something special. This Sunday it was pumpkin pancakes. I had a little pumpkin left over from some other recipes I made this week and decided to make the best of it. These pancakes were super good and really fluffy. (And that is a lot coming from me because I am not the biggest pancake fan). I am sure you could easily make them gluten free by changing the flour from whole wheat to a gf blend, but I haven't tried it, so you will have to let me know how that goes.
The secret to fluffy pancakes is letting the batter sit 5-10 minutes after mixing and not over mixing it. That lets the baking powder do its thing. Trust me. It takes longer, but it is so worth it. Also, cook the pancakes at a lower heat. Again, takes longer, but so worth it.

Ingredients
2 c Whole Wheat Flour
1.5 T Baking Powder
1/4 tsp Salt
1/4-1/2 tsp Cinnamon
1.5 c Plant Based Milk (I use almond)
2 T Pure Maple Syrup or Agave Nectar
1 tsp Vanilla
1/4 c Pumpkin Puree

Directions
1. Combine and mix dry ingredients in large bowl.
2. Add wet ingredients and whisk until just combined.
3. Let sit 5-10 minutes to allow baking powder to let the batter rise. This step is CRUCIAL if you want your pancakes to be fluffy.
4. Cook on a griddle at 300-350 degrees, they should cook a little slowly. The slower the cook, the fluffier they will be.
5. Serve with nut butter, syrup, and fruit of choice.
