Sweet Potato Quinoa Chili

It is a snow day in SLC. Like an official snow day. This has not happened since I was eight years old. No joke! It has been 23 years since our last snow day. There was about 2 inches on the ground last night and we woke up with over a foot. I joked to my husband, I wonder if it will be a snow day...then my phone started ringing at 6 a.m. from an unknown number. So obviously, I did not answer. Then 45 minutes later, the number called again, so I answered. It was the SLC School District calling to tell me school was cancelled. I don't even have a school aged child...


So the roads are INSANE, Luckily my husband didn't have to be to work until 10 am. He called...his first four patients had cancelled. He didn't have a patient until 2 p.m.! So we got a nice fun morning all together. There was a snow cave built, snow painting, joy school, snow ice cream, legos, carpet cleaning (not fun), and bike riding to Incredibles 2 (while baby slept and 3 year old was at a neighbor's house).

All in all, a great morning. I also got this beauty in the instantpot so we can have a warm delicious dinner and I don't have to even think about it for the rest of the day because the instantpot did all the work. I love you instantpot.

Ingredients
1 yellow onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
olive oil
1.5 c dry black beans (or 2 cans)
5.5 c water, divided
1 tsp better than boullion, veggie
1/2 c quinoa
1 large sweet potato, diced
2 cans diced tomatoes
1 tsp cumin
1/2 tsp chili powder
salt, to taste

Directions
1. Dice onion and saute in oil. (I do it in the instantpot on saute setting.) Dice and add pepper and garlic until soft.
2. Add beans and 4 c water and put on lid. Pressure cook 25 minutes and do a natural release.
3. Meanwhile, cube sweet potato. When beans are done, drain excess water. Add potato, tomatoes, quinoa, 1.5 c water, better than bouillon, and spices. Put on lid and push broth/soup button and set for 5 minutes. Natural release.
4. Taste and add more spices as needed. Garnish with cilantro, avocado, and hot sauce.
5. ENJOY.
