Banana PB Bites


We are on the go a lot. These are great to pop in your bag and eat on the go when you need a quick snack to hold you over. They are also great to have after a workout.


The recipe is pretty much the same as my banana bread recipe with only one major change. Instead of apple sauce or oil, you use peanut butter or your preferred nut butter of choice. You can also throw some protein powder in there as well. If you are a chocoholic, I am not, that might make a tasty treat. Can't say I've tried chocolate, but vanilla works well.


Ingredients

1/2 Peanut butter or nut butter of choice

3 Bananas, smashed

1 tsp Baking Soda

7 T Water, divided

2 T Chia seed

1 tsp Pure Vanilla Extract

1/2 tsp Baking Powder

Pinch of Salt, optional

2 c Whole Wheat Flour

Cinnamon, to taste

Nutmeg, to taste

* 1/3 c Honey, Agave, Molasses, or Pure Maple Syrup

*1/2 scoop Protein Powder

Baking Directions

1. Preheat oven to 350 degrees F

2. Combine chia seeds with 6 T water in a small jar or tupperware with a lid. Shake and let settle for a few minutes.

3. Smash bananas with tines of a fork in a large bowl. Add peanut butter, baking soda dissolved in 1 T of water, chia seed, and vanilla and mix thoroughly.

4. In a separate bowl, whisk together baking powder, salt, flour, cinnamon, and nutmeg. Add to wet ingredients and mix thoroughly.

5. Add sweetener and protein powder, if you are using it, to taste. I start with less and work my way up so the taste isn't too strong.

6. Pour batter into greased muffin tins or use muffin papers and bake 20-25 minutes until an inserted toothpick comes out clean.

7. Cool on a wire rack. Store in a sealed container or bag in the fridge.
