My Plant Based Vegan Kitchen

I've had lots of people ask me things like,
"Do you make your own tahini?"
"No."
"What type of protein powder do you use?"
"Whatever plant based protein is on sale." (But my favorites are Orgain Organics Superfood Vanilla and Sprouts Vanilla.)
"How long do you soak lentils?"
"You don't soak them. I cook them in my rice cooker or instant pot at a 2:1 water to lentil ratio."
"How do you replace eggs while baking?"
"1 T flax seed mill + 3 T water = 1 egg." (You can also use the same ratio of chia seeds if you don't mind the seeds in what you are baking.)
So, I've decided to show you my kitchen. My teeny tiny postage stamp sized kitchen. Here it is.

See. Nice and tiny. No big fancy pinterest kitchen here. Just my humble, 78 year old kitchen. I honestly have about 1.5 feet of usable work space between the stove and the sink because the other portion of my counter is usually covered in drying dishes or a mountain of who knows what. It is my dream to some day have a giant kitchen with a island and not have my table crammed in a corner. And to not be tripping be tripping over bouncy chairs, exersaucers, car seats, and super heroes. But those are what makes my kitchen my home.

My "work space".
My "pantry" is tiny. It always seems to be bursting at the seams. A few months ago, I went to the Dollar Tree, because I am the cheapest person in the world, and got a bunch of containers that were all the the same size hoping I'd be able to fit more food in my pantry. And I can, so now there is some semblance of order.

As you can see, my pantry is mostly beans and cereal. Because that is what we mostly eat. I buy flats of beans during the case lot sales at Smith's. I try and make my beans myself, but it is always nice to have cans when I need something fast or didn't plan ahead. My instantpot makes those situations easier to avoid.

When you look in my fridge you will see the few non-plant based items we keep in our house. My husband calls himself a social omnivore AKA we keep eggs, cheese, and milk in the house and he eats meat when we go out or eat at someone's house. My son is also 90% plant based. I don't feel it is my right to decide if my son is or is not fully vegan. It is his choice and he likes eggs and cheese. Our agreement is that whatever animal products he consumes is free of hormones and anti-biotics. Costco is a great place to buy these for cheap and is the only place I find regular cheese that is Rbst free.


My freezer....is mostly breastmilk.
I always keep a big bag of frozen stir fry vegetables and frozen peas, my son loves peas. I also always keep a bag of frozen bananas and I often freeze my spinach if I buy it in a big bag and don't use it all fast enough. If it is going in smoothies, it doesn't matter if it's frozen. Also, you can freeze hummus so sometimes if I find it on sale, like $1 or less a tub, I will buy a bunch and freeze it. You can pull it out the day before you want to eat it and put it in the fridge and it tastes the same and the texture is normal.

Last of all. How/where I get my produce. I am a member of the cottonwood produce co-op. You can find them on instagram @cottonwoodproducecoop. It is great. You can order a full or half box of produce each week. The full is $25 and the half is $15. You can order week to week or be a regular. (I am a regular). You order on Saturdy-Sunday and pick up Tuesday mornings, which is great because I drop off my son at preschool and then go get my food. Also, the last co-op we were part of had Saturday pick ups and we often missed out because we are gone on the weekends a lot.
