1 Minute Hummus

I love hummus. Let me restate that. We love hummus in my house. My one year old son will eat half a container by himself without batting an eye. Hummus is one of the foods that if I get it out of the fridge he will start screaming until I feed it to him. Hungry or not. That is why I make my own hummus, because hummus is expensive and we go through a lot of it. Plus it is so easy and so cheap to make. All you have to do is make an investment in a jar of Tahini every few months (at least for me because I use it a lot) and you are golden. If I don't have you convinced, here are just a few reasons why I love hummus:

It is delicious

It is versatile: dips, veggies, crackers, toast, etc.

Protein

Good way to liven up salad

Snack

Better than mayo on a sandwich or wrap

You can freeze and thaw it and it doesn't loose its texture

Quick and easy to make

But if I still don't have you convinced, check out just how easy hummus really is to make. Give it a shot. Try adding different flavors like garlic, pesto, roasted peppers, etc. Play with it. Have fun. But most of all, ENJOY.

Ingredients

1 can garbanzo beans

1/2 T Tahini

1 tsp lemon juice

*pinch of salt

Directions

1. Mostly drain your garbanzo beans. I say mostly because you will need some of the liquid in order to puree them. For this recipe, I do not rinse the beans, it works better to use the canning liquid than water from rinsing. The beans stay softer and puree better (which is why I prefer using canned instead of dry beans when making hummus. Both work, canned just give a creamier and smoother texture.)

2. Add garbanzo beans and liquid, Tahini, and lemon juice to a food processor and process until smooth. Taste and add salt if needed. (Right now is a great time to add any add-ins like garlic, pesto, roasted peppers, etc.)

3. ENJOY
