Garden Vegetable Tacos

I won't lie. My original intent for this meal was smothered burritos. However, my dog ate the tortillas. And this is not a, "My dog at my homework," type of excuse. If you leave food out, with the exception of the fruit bowl, my dog will get it off the counter or table and eat it. However, usually packaged food is okay. Unfortunately for me, every once in awhile, he goes through a phase where he refuses to eat his food and is therefore really hungry, and if we leave anything packaged out. It's gone.

That is what happened to my tortillas. I made everything for the meal and put it all in the oven to A. stay warm and B. be safe from the dog while I went to pick up my husband from work. When I got home, the package of tortillas was half eaten on the rug in the front room. So, my smothered burritos turned into really awesome tacos. Goes to show that even when your dog "eats your homework" you can still get an "A+", it all depends on your attitude. (And the fact that I had corn tortillas in the fridge.)

Ingredients
Olive oil
1/2 yellow onion, chopped
2-3 cloves garlic, minced
1 tsp cumin
1/2 tsp chili powder
pinch of salt
1 medium zucchini, julienne
1 large carrot, shredded
1 can black beans, rinsed and drained
Corn tortillas
1 avocado, pitted and diced
2 tomatoes, diced
hot sauce, optional
salsa, optional
cilantro, to garnish
Directions
1. Heat some olive oil over medium high heat while you chop your onion. Add onion to oil and saute until soft and translucent. Meanwhile, mince garlic, julienne zucchini, and shred carrot.
2. Once onion is soft, add garlic and saute 1-2 minutes, stirring constantly to prevent burning.

3. Add zucchini, carrot, spices, and sprinkling of salt. Stir until everything is coated in spices and saute until zucchini is soft.
4. Rinse and drain black beans and add them to the veggies. Cook until beans are heated.

5. Wrap as many tortillas as you will use in a damp cloth and heat in the microwave for 30 seconds, this helps them not break when you fold them like a taco.
6. Now it is time to build your tacos. Layer the black bean and veggie mix first and top it with avocados, tomatoes, hot sauce, salsa, and cilantro (if you are using the last three items)
