Mexican Spiced Butternut Squash Soup

It is fall. The insane heat of this summer is finally over. We are also finally getting some rain. This summer has been the driest summer on record in Utah. It has been unbearably hot. I am so grateful I was pregnant last summer, not this summer. With that said, fall = soup in my household. As soon as the weather turns my husband gets excited and says, "Soup?" And I heed the call.

I am especially excited this year because I have successfully grown my own butternut squash. Look at this thing. It is beautiful. Not to mention, so delicious. There is something about homegrown anything that makes it taste better. The tomatoes are sweeter, the kale isn't as bitter, the butternut squash is nuttier and richer, the cucumbers make better pickles, the zucchini is gigantic...I actually ended ripping out my zucchini because I discovered it was choking/killing my butternuts and that just won't do.

With all that said, let's talk about this soup. It is easy. But it takes some time just because the squash and the potatoes take some time to cook. Like you will discover with most soups I make, I crock pot it. (This is a soup I crock pot.) Even if a recipe that calls for boiling and simmering etc. etc. but I just put it all in the crock pot on low (or high if I procrastinated) and let it do the work for me
A. because I am lazy
B. because I am busy
C. because the longer the soup cooks, the more flavorful it becomes.
Same goes for curry. We always joke that curry tastes better the second day. Because it has been sitting and the flavors have been combining for an entire day.
