Creamy Tahini Zoodles

Look at me, creating two posts in the same week. I am on my 'A' game today. Not really, we just have a church party tonight so I don't have to meal prep during nap time. HOORAY!
Another thing that helps me be more productive is that I just got back from vacation - not that the vacation rejuvenated me, it was Disneyland, it was exhausting, I just have more time because I am no longer planning the most epic Disney vacation ever. And it was EPIC.

**He was sick of waiting in line and broke into Disneyland. The video wouldn't upload, but it was HILARIOUS.

Other great things were that my son took a 2 HOUR NAP every day (3 days) in the park. It was amazing. ANd being pregnant, I couldn't ride the rollercoasters, so I just walked laps with the stroller while everyone else played.

Want to know what is great about Disneyland? They will accommodate ANYTHING and EVERYTHING. Because they want everyone's experience to be magical.
We went to Goofy's Kitchen for breakfast with Goofy, Minnie, Pluto, Chip, and Dale. The chef took me on a tour and made me vegan waffles and a vegan vegetable hash. Not too shabby Disney.

Want to know what else is magical? How easy and how delicious this recipe is. So often I read recipes on different blogs, or even my own, and they say, this is such an easy recipe and then it calls for the most ridiculous ingredients that are expensive or that you will use a tsp and never use again. This is NOT one of those recipes. This recipe has three ingredients. That is it. Which is awesome.

Ingredients
Zuchinni, the more people, the more zucchini
Marinara Sauce
Tahini
*optional*
-nutritional yeast or vegan cheese
-salt and pepper

Directions
1. Wash zucchini. Using a spiralizer, create zoodles.
2. Combine marinara and tahini sauces. I try to do a 4:1 ratio, but go according to your taste buds.
3. Warm zoodles in a large skillet with a little oil. Once zoodles are starting to get warm, add sauce and warm through. Top with nutritional yeast or vegan cheese.
4. ENJOY
**PS: I like to have falafel with it**
**And I made it look like Mickey Mouse because we just got home from Disneyland**
