Kale Berry Bowl



I love smoothies. I drink one pretty much every day. I also love acai bowls and smoothie bowls, but am always too lazy to make them (because they are so much more work than a smoothie. Not really.) However, recently I discovered something new. I don't know if it is new or if I am just late to jump on the band wagon, but using cooked beans, usually garbanzo beans, in a smoothie. What a great way to add some protein and thicken up the smoothie to make it into a smoothie bowl. I was pretty excited and am delighted with this creation. (I won't lie though, I did NOT let my husband see me put beans in my smoothie bowl or else I would never hear the end of it.)


There is a wide variety that you can do with this recipe and I will give you some ideas. But be creative and use what you love. That is what I do. I won't lie, it does help to always keep some frozen bananas or berries on hand, so much tastier and a better consistency than ice.


Ingredients

1/3 c cooked garbanzo beans (chickpeas)

1 c frozen mixed berries

1/2 c pineapple

1/2 c almond milk

Kale (I used 1 large leaf)

Chia seeds

Toppings

Canteloupe

Pumpkin Seeds (bananas, kiwis, or additional berries)

Chia Seeds (or any other seed)

Pecans (or any other nut)

Granola

Directions

1. Combine garbanzo beans, berries, pineapple, almond milk, kale, and chia seeds in a high power blender (I used Blendtec) and blend until smooth and thick. (I use the ice cream button)

2. Pour into a bowl and garnish with toppings of choice

3. ENJOY
