Peach Chia Freezer Jam



There is an adult day care center in my neighborhood with a peach tree. For the past two summers we have watched the peaches ripen and fall to the ground. This is our 3rd summer in our home and I finally decided to get up the courage to go ask if I could pick their peaches.


The result was 10 pint sized jars of jam, 4 quarts of canned peaches, popsicles, and 12 dehydrator trays of dried peaches and fruit leather.


I made two different recipes for jam. One is my own recipe with no added sugars because I don't eat added sugars, and the other is normal jam, a recipe I found online. Because the sweetness of this jam relies wholly on the sweetness of the fruit, it is tart due to the lemon juice (to keep it from turning brown) so you get to decide if you want to add a little liquid sweetener or not and if so, how much.

Also, The best thing about this chia jam recipe is that it is so easy and it doesn't call for pectin so all the ingredients were already in the kitchen. Hooray. Who doesn't love easy and convenient (not to mention delicious) food?


Ingredients

3 c peaches, skinned

1 T lemon juice

2 T water

3 T chia seeds

1-2 tsp Agave Nectar or Pure Maple Syrup (optional)

Directions

1. Wash, peel, and pit peaches. Place peaches in a food processor and process until smooth. (I like to leave a few chunks in there)

2. Pour into a bowl and add lemon juice, water, and chia seeds and stir until well incorporated.

3. Taste and decide if you want to add a little bit of sweetener.

4. Pour into mason jars and store in the freezer or refrigerator. Let sit at least one hour before eating.
