Quick and Easy Granola



I am a cereal addict (as I have admitted t in previous posts.) To be honest, the rate in which I can plow through a box of cereal is somewhat alarming. Which is why I have spent years perfecting my granola recipe. To be honest, I have lots of granola recipes, but this is my go-to. Nothing special. No bells and whistles. Jump simple, quick granola when I am in a pinch or having some serious cravings Less than 25 minutes, start to finish. (minus cooling time).

Ingredients

5 c rolled oats (not quick), use gf if you want the recipe to be gf

2 T chia seed

2 T flax seed

12 T water, divided

1-2 tsp cinnamon

1/2 tsp nutmeg

1/8 c molasses

1/8 c agave nectar

1/4 c pure maple syrup

1 T coconut oil

2 T nut butter, I use peanut or almond

1 tsp pure vanilla extract

*optional add ins

shredded coconut

nuts

dried fruit

cocoa or carob nibs


Directions

1. Preheat oven to 350 degrees F

2. In a large bowl, combine oats, cinnamon, and nutmeg

3. In separate jars combine chia with 6 T water and flax seed with remaining 6 T water. Seal jars and shake to combine, let set up

4. In a small saucepan, combine oil and nut butter and let melt over medium heat. Once melted add molasses, agave, and maple syrup and stir constantly to combine and prevent burning.

5. Once combined, remove from heat and add vanilla. Stir to combine and pour over oat mixture. Stir until oats are well coated. Re-shake chia and flax mixtures and pour over oat mixture. Stir to combine.

6. Spread on a non-greased cookie sheet and bake for 17 minutes.

7. Remove from oven and let cool to room temperature (this allows it to harden a little more without burning). If you are adding any "add-ins", add them in now. Store in a sealed container.
