PB Banana Oatmeal Cups

I love oatmeal.

If you are thinking that the only thing I ever cook is breakfast and bread, I think you might be right. But breakfast is my favorite meal, which is funny because as a vegan there are a lot of breakfast options that are a no go. But I love breakfast. In fact, I love breakfast so much that I eat it twice every day. Breakfast before I work out, breakfast again after I work out. I am not one of those work out before breakfast type of people. It is like trying to drive a car without gas. If I eat and give myself an hour to digest, I am much stronger and feel a lot better. Plus, then I get to eat breakfast again. It is great. You should try it.

Anyway, this is a great recipe for a morning when you have a little time and the best part is if only you and your baby are eating it, it lasts for a few days. They are also great snacks to take on the go in the car, or on a walk, or just at home.


Ingredients
2 c rolled oats (can use gf oats)
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 c almond milk
1 T flax seed
3 T water
2 medium bananas, one mashed and one sliced
2 T natural peanut butter (or other nut butter of choice)
2 T pure maple syrup
1tsp pure vanilla extract

Directions
1. Preheat oven to 375 degrees F. Grease or line cupcake pan with liners and set aside
2. In a large bowl, combine oats, baking powder, salt, and cinnamon. Add milk, flax, water, 1 mashed banana, pb, syrup, and vanilla. Mix well.
3. Fold in sliced bananas.
4. Pour into prepared cupcake times and bake 15-20 minutes until a toothpick comes out clean.
5. Let cool for 10 minutes then remove from pan and cool on a cooling rack.
6. ENJOY
