This summer has been so hot in Utah. Record highs. No rain for all of July, half of June, and the first week or so of August. With temperatures at 100 degrees or more most of those days. (In my mind if it is over 95, that is the same as 100 as well). Needless to say, my AC bill has been through the roof and I don't even cool my house to less than 78. So we basically feel like we are melting and or sweaty all the time.
What to do? What to do?
On the upside, summer is the magical time when produce of all sorts gets really cheap and one of the things I love to make with all that cheap produce is all fruit Popsicle. They are so easy, once you have the molds. I wanted molds for so long, but refused to cough out $20+ for them. Then one of my neighbors was getting rid of hers at a swap meet. Free99. Hooray.

Ingredients
1 mango, peeled and pitted
1 lime, juiced
1/4-1/2 c fresh squeezed orange juice
Directions
1. Peel, pit, and roughly chop mango and place in a high power blender. I use my Blendtec.
2. Squeeze juice of 1 lime over mangos and add orange juice.
3. Blend until smooth and pour into popsicle molds.
4. Freeze for at least 3 hours.
