Tomato Soup and Grilled Cheese?

Did I not warn you about how much soup you would be seeing from me this autumn? Our tomatoes have rocked this year. I haven't watered my plants in over a month and they just keep on rocking. And I am not complaining. Tomato sauce. Salsa. Tomato Soup. And one cannot have tomato soup without a grilled cheese sandwich.
So how does a vegan eat a grilled cheese sandwich? With vegan cheese of course. I rarely buy vegan cheese because it is ridiculously expensive for the amount you get and most varieties contain casein, milk protein. However, I have found one variety that does not contain casein and I am really excited about it. It is Follow Your Heart Vegan Cheese and it isn't terribly priced. I was really excited about it when I found it at the store. It melts well. Tastes really great. I personally like the mozzarella variety. Check it out, you will not be disappointed.
For this meal, I made some delux grilled cheeses to pair with the soup. My mouth was rejoicing with every bite. Especially when I dipped the sandwich in the soup. Wow. So good.

The key to this soup is three things.
1. Garden tomatoes, basil, and oregano
2. Vegan alfredo sauce
3. Balsamic Vinegar
The fresh tomatoes and herbs give incredible flavor.
The "alfredo sauce" makes the soup creamy.
The vinegar gives a sweet bite that completes the dish.

Ingredients (for soup)
1 Yellow Onion, diced
4-5 Cloves Garlic, minced
Olive Oil
Roma Tomatoes, 10-15 depending on size
Fresh Basil, a lot *You can also use dried
Fresh Oregano, a few sprigs *You can also use dried
Salt and Pepper to taste
Balsamic Vinegar, just a splash
Directions
-Combine onion and garlic with olive oil in pan and saute until golden and tender
-Meanwhile dice tomatoes
-Transfer to medium sauce pan and add tomatoes, whole basil leaves, and whole oregano leaves. Bring to boil, then simmer 25 minutes
-Meanwhile, make vegan alfredo sauce (see recipe in sauces)
-Add to tomatoes and transfer to high power blender and blend until smooth

-Return to pot (or crock pot) and simmer on low. Add splash of balsamic.
-ENJOY
Ingredients (for sandwiches)
Bread of choice, I prefer Honey Whole Wheat
Vegan Cheese
1 Tomato, sliced
Baby Spinach
1 Avocado, sliced

Directions
1. Layer spinach, cheese, tomato, and avocado slices on one slice of bread and cover with another slice of bread.
2. Place in a grilled cheese or Panini maker (if you have one it is much easier to keep all the ingredients in the sandwich), close it, and let it do all the work.

3. Dip it in your soup and ENJOY
