Garden Hummus Wrap

I love summer because I love gardening. I love gardening because I get delicious, fresh, organic veggies in great abundance. This year not only has my zucchini been doing well (even though that seems to be the only thing I post about.) But my tomatoes have rocked. I just made a big batch on tomato sauce yesterday, don't worry the recipe will come soon. My kale and my cucumbers have done quite well also. I think I have about 12 jars of pickles in my fridge and I don't even like pickles. But my husband and my son sure do. Yes, he's 1. And yes, he loves pickles. Yesterday I caught him sucking on a spray bottle of white vinegar going, "Mmm." He gets it from his dad.

Anyway, I hate sandwiches. But for some reason, if you put it in a wrap I will eat it. I think it is a mental block. I ate nothing but sandwiches made from the dredges of what passengers left behind for 3 summers when I was a river guide on the Colorado River. Ever since then, I can't eat sandwiches. But wraps I will sometimes do. What is great about this wrap is that I grew everything in my garden and made my own hummus. You can find the link here. And, it is a quick, light, and tasty lunch for at home or on the go. However, I did have to use a toothpick to hold it together because I stuffed it too full. So if you are on the go, don't make that mistake.

Ingredients
Tortilla/Wrap of choice
1 Tomato, sliced
1/4 Cucumber, sliced
Kale, cut into bite sized pieces
*Toothpick, just in case

Directions
1. Spread your desired amount of hummus over the entire tortilla/wrap
2. Spread veggies along the center of the wrap and roll it up

3. Hold it together with a toothpick if necessary and...
4. ENJOY
