Sweet Potato Fries

Spring in Utah = warm, snow, warm, snow, rain, warm, hot, snow, etc.
In one day.
Ex. I went on a sweet trail run with my new friend Cait and looked like this by the end.

That afternoon, my husband ran home in 60 degree weather in shorts and a singlet.
But I think Cait and I had way more fun.
Onto bigger and better things.
I hate potatoes.
No joke. I truly do not like potatoes. It is an on going battle between my husband and I for me to put potatoes in curry or soup. He LOVES potatoes and never eats them because I hate them. I finally gave in with the curry, and whenever I get normal potatoes in my bowl, I just plop it right into his bowl without saying anything. I get no potatoes. He gets all the potatoes. Everybody wins.
However, I love sweet potatoes (if you haven't noticed.)

I will put sweet potatoes in anything and everything. They are so delicious (and actually have nutrition) and I like them in every form, except "candied yams" at Thanksgiving, that is just wrong, and I like them in everything. Curry. Soup. Burritos. Baked. Roasted. You name it, I love it, again, except for "candied yams".
Sweet potato fries. Those have a soft spot in my heart/stomach. I never buy the frozen kind because they are ridiculously expensive and have a whole bunch of additives. And I don't make them at home nearly as often as I should. But the other day, as in almost 3 months ago because I am really behind in posting, I was craving french fries SO BAD! It is the only food I crave when I am pregnant and I am over 1/2 through my 2nd pregnancy and have only ever given in once. We were just getting done skiing and I was STARVING and my dad decided he needed to go help my brother-in-law with his kids so hubby and I were stranded at the lodge and I could not resist. I NEEDED them.

But back from my tangent. So once again, 3 months ago, I was craving fries, and I thought to myself, 'Self, you should make sweet potato fries.' And then I thought to myself, 'Self, that is a brilliant idea. I bet they go well with Cowboy Caviar salad. And so that is just what I did. I popped the sweet potatoes in the oven to bake and quickly whipped up some cowboy caviar (thanks Instant Pot), and by the time the fries were ready. So was the salad. AKA cowboy caviar on top on spinach. Super simple.
2 Medium Sweet Potatoes
Cinnamon
Salt
Directions
1. Preheat oven to 425 degrees F. Wash and slice sweet potatoes into long 1 inch thick strips
2. Toss with cinnamon and salt
3. Bake for 20-25 minutes (I stir them around after 10 minutes)
4. ENJOY
**You can make them crispier by adding a little bit of melted oil of your choice. I don't.**
