Green Smoothie Bowl and Parfait

I am continuing on my quest to only eat pureed foods...I feel like that is the only thing I ever post about. I promise we do eat food that isn't smoothies or smoothie bowls. I have just been in a cooking rut, making the same meals that I like. But, happy news, I finally found a food co-op in SLC to replace Bountiful Baskets, they stopped their SLC pick up. I am so excited. $25/week for a full big box of fruits and veggies. It is more food than I got with Bountiful Baskets. But, they also do 1/2 orders for $15. And, the pick ups are Tuesday mornings while my son is at pre-school. That is a big time win because I hated Saturday pick ups. I like to be gone having fun on Saturday. Another great thing is that on Saturday, they post EVERYTHING that will be in your box so you can decide if you want it or not.


So, now that I will be forced to use different produce on a weekly basis, hopefully I will get out of my cooking rut. I am also just really behind on posting. Something about having a baby. Ridiculous, I know. I am actually typing one handed because said baby is nursing at the moment. And as you all know, I am all about breastfeeding. It is so good for baby AND mom. Nutritious for baby, hormone regulation and healing for mom, bonding for both,

Ingredients
Green Smoothie Base
1 mango, peeled and seeded
3 big handfuls of spinach
1 large carrot
1 scoop vanilla protein powder
1/4 c orange juice
10 ice cubes
1. Blend until smooth and thick
Chia Pudding
1/2 c almond milk
2.5 T chia seeds
1. Combine and stir every few minutes until thick
Toppings
Granola
chia seeds
walnuts
bananas
blueberries
peanut butter
maple syrup
power ball
*For the bowl, i pur granola on the bottom, green smoothie base, the topped it with granola, chia, bananas, blueberries, pb, and syrup.
*For the parfait I layered smoothie base, chia pudding, and topped with granola, bananas, walnuts, and a power ball.
