Pumpkin Bowl

It is fall. The leaves are changing and pumpkin is finally cheap at the store. YAY! That means, it will be in almost everything I make until the end of winter because I love it so much. Seriously, it is so good. I wish it was available all the time. I guess the canned stuff it, but it gets pricey during other times of the year. The best time to buy it is actually after Thanksgiving because the price plummets, so I buy a TON of it and use it for the rest of winter. Call me a pumpkin hoarder, I don't care. I know what I like.
Other than being delicious, I like pumpkin because is is so diverse. I use it in sweets, breads, smoothies/bowls, breakfast, salads, curries, etc. You name it, I can probably figure out a way to use pumpkin in it. Because pumpkin is awesome. With that said, here is the recipe so you can enjoy a delicious pumpkin bowl for breakfast.
Ingredients
2 leaves green leaf lettuce 1 large carrot 1/2 c pumpkin puree 1 pink lady apple 1/4 c oj 1/2 c frozen peaches Cinnamon 1/2 scoop vanilla protein powder
Directions 1. Blend until smooth 2. Top with chia seeds and granola
3. ENJOY
