Peach Sorbet



It has been an abnormally hot summer and fall this year in Utah. The hottest and driest year on record. And that heat has not stopped. It is mid September and the temperatures just finally dropped from the 90's into the welcome 60's and 70's. It almost feels cold because I have gotten so used to such high temperatures.

A few weeks ago, my parent's peach tree was ready to harvest. Hence why I posted the story about making peach jam, peach pies, etc. Unfortunately, I wasn't able to can them all, so I peeled and froze a bunch to use in smoothies in the winter. But, the heat got the best of me, and I used a bunch of my frozen peaches to make sorbet and I do not regret it.

This sorbet has 2 ingredient and it is delicious. And it is easy. As long as you have a Blendtec or other high power blender. It is really satisfying on a hot day. And as a vegan and someone who doesn't eat refined sugar, I don't eat "desserts" very often.


Ingredients

4 c frozen peaches

1/4-1/3 c almond milk


Directions

1. Combine all ingredients in a high power blender and blend until smooth. (I used the ice cream setting on my blender and it was the consistency of soft serve ice cream.)
