It's Beginning to Look a lot like Persimmons


It is beginning to look a lot like Christmas...Halloween is over. Even though Thanksgiving is still 2.5 weeks away, according to the retail industry, it is Christmas.

Daunting, I know. Which is why I want to take this moment to remind you to sign up for my Healthy Holidays Challenge. I participated in a challenge like this a few years ago and it was a blast. I ran this challenge a two years ago and I still have people thanking me for helping them to switch over to making healthy habits and choices. I ran it before summer this time, so why not have some extra help, love, and support for ourselves and our bodies this holiday season. Let's get rid of the added stress the holidays can bring by taking care of ourselves before, during, and after. Not just regretting and making up for it after.

Now, onto the other reason we are here.


My father-in-law is from northern California. He still has property that he manages there. Because if that little fact, he goes to San Jose once a month to check on things. On his property he has several fruit trees. He always brings back the most beautiful fruits. His avocados are to die for. So big. So creamy. If they were cold, it would be like eating ice cream. His lemons are the size of oranges. I thought they were oranges, and I peeled one and took a bite. Bad choice. He has tangelos. Amazing. However, this trip he did not bring avocados, or lemons, or tangelos. He brought us back persimmons. And they are huge. And just like the other fruits, they did not disappoint.

So what does one do with persimmons? They need to be peeled. Once peeled they are really messy, so unless you have a fork and knife, they aren't a practical fruit to take in a lunch or eat on the go. But they are sweet, so I thought I'd give them a whirl in the blender and see what happened. Again, they did not disappoint.

Ingredients

1 large persimmon, peeled

Kale

1/2 cucumber, peeled

4 ice cubes

1 tsp chia seed

water or almond milk (depending on how creamy you want it)

Directions

1. Combine all ingredients in a high power blender, like a Blendtec, and blend until smooth.

2. ENJOY
