Apple Cinnamon Smoothie



I love fall. I love watching the changes in nature. The colors are so beautiful. And, it's apple season. We have been trying to get into the mountains as much as possible lately. But unfortunately, I've been really bad about taking pictures. But I have gotten a few. This is me chasing after my first born up Millcreek Canyon when the colors were first starting to change.


I could grow old on this bench.


But let's get back to the apples. I always look forward to the fall because my parents' apple tree produces thousands of apples. And I am not exaggerating. I love harvesting the apples. Unfortunately for me, this year, the tree is dormant. I think I got 5 apples off of it. Every once in a while, the tree needs to rest. But I have found other ways of getting my apple fix through Green Urban Lunchbox, an awesome co-op that partners with people who have gardens and trees that they can't take care of. So, I (or you) volunteer to go harvest and 1/3 of what you pick goes to the owner of the trees, 1/3 goes to the food bank, and 1/3 goes home with you. And if you aren't afraid of cutting around worm holes (perfect for jam or apple sauce) then it is awesome.


This is a super tasty and super easy smoothies that is a healthy, quick, and energizing part of lunch, breakfast, or a snack. My 1 year old was a big fan. (That isn't saying much because he is a fan of all green smoothies and all food.) I always laugh when he snarfs down a green smoothies and a bunch of lentils or beans. I am brainwashing him.


Ingredients

1 large (2 small) Apples

Spinach, big handful

1 Large Carrot

Cinnamon

3/4 c Almond Milk

Flax Seed Mill

Ice Cubes

*Vanilla Vegan Protein Powder* optional


Directions

1. Combine all ingredients in a high power blender and blend until smooth

2. ENJOY
