Green Protein Bowl


I feel like I am so behind on posting. Probably because I am. That is what happens when you eat delicious and real meals all the time. Another reason, is because I actively try to not get in a recipe rut. I am sure you all know what I mean. When you have your go-to recipes and meals and you don't expand into new ideas and ingredients. One thing that really helps me break the rut is the CSA that we participate in. It is called Bountiful Baskets. The items are not all "local" but what I like about it are these things:


1. I don't have to participate every week. I pay $17.50/week and decided on Monday or Tuesday of each week if I want to participate. So there is no upfront cost for x amount of weeks and if you miss one it doesn't suck to be you.

2. I receive one basket of fruit and one basket of vegetables. And they are always different. So it has forced me to expand my palate and my cooking.

3. It is year round. Not just in the summer and fall.

4. I have the ability to order bulk products for cheap. Ex. I just bought 45 lbs of sweet potatoes for $18.50. That should last us all fall and winter, hopefully. It was such an amazing price, I couldn't pass it up. So be expecting to see a lot of sweet potatoes coming at you.

Anyway, enough about CSA's and sweet potatoes. Let's get back to the reason we are here, the green protein bowl. Have I mentioned I love smoothies? I love them even more when they are so thick I can eat them with a spoon like cereal, because cereal is one of my favorite foods. I also love that smoothies and smoothie bowls are such a quick way to get loads of fruits and vegetables into your body.

A few things about this smoothie bowl. Yes, there are beans in it. They help thicken and provide protein. Trust me. I was leery at first but you can't taste them. I promise. I have lots of frozen peaches from harvesting my dad's tree this summer, so you may have prepare ahead of time for this recipe. But I am sure you can use the same amount of any frozen fruit.


Ingredients

1/2 can garbanzo beans

1 c frozen peaches

1 large carrot

1-2 big handfuls of spinach

1/2 scoop vegan vanilla protein powder

*tiny bit of almond milk or water, I used water

Directions

1. Combine all ingredients in a high power blender, like a Blendtec, and blend until smooth

2. Top with your favorite cereal, granola, nuts, chia seeds, or fruit

3. ENJOY

*As far as adding the liquid. Do a really small amount, you want this to be thick enough to eat with a spoon, but you need some liquid in order for it to blend. I use the ice cream setting on my Blendtec.
